Slicer blades are high-precision tools and being the heart of the slicer, they have a decisive influence on the placement of the portion and last but not least, determine give-away and yield. The quality of the sliced portions as well as the efficiency of the slicing process are therefore largely determined by the correct handling of the blades and sharpening devices. However, transparent, comprehensive documentation of all information on these topics has been associated with a great deal of effort for food processing companies until today. As a partner to the food industry, Weber Maschinenbau has developed a solution for this challenge, which was presented during interpack.
What is the current stock of slicer blades and on which machines are the blades currently located? How many grinding processes are carried out and in what exact state of wear are the blades? And what parameters were used to grind the blades? These and many other questions can now be answered quickly and easily – with Weber Durablade®Care. Under the Durablade brand, the slicing market leader Weber sells specially developed and manufactured circular and involute blades for slicers and now also an intelligent, digital management system for the very same. With the help of Durablade®Care, food processing companies are able to use their blades in the best possible manner, adapted to the product and application, save costs, and increase the efficiency of their entire production lines. This is made possible by the bundling of all information about the blade stock, the locations where the blades are used and stored, operating data as well as information about grinding processes. Thanks to the consolidation of these various data, they can be evaluated and compared in a targeted manner, resulting in a variety of added values for food producers.
With Weber Durablade®Care, food producers maximize the efficiency of sharpening blades and take blade maintenance to a higher level.
In addition to real-time information on which line or slicer a blade is located, or a history of which blades were used on which lines, Durablade®Care also provides detailed information on which slicing programs were used and how many portions, slices, and kilograms of product a blade slices per clamping process. By displaying precise information on parameters such as slicing speed and slicing gap, the performance of each individual blade can be evaluated accurately with regard to any application. The daily service life of the blades as well as the total service life are also documented, which allows a transparent comparison of different blades and therefore enables optimized planning of use.
Another valuable benefit of Durablade®Care is the display and evaluation of sharpening processes. If a blade is resharpened in a sharpening device, the entire sharpening process can be visualized and evaluated in the Durablade®Care system. This makes it possible to see exactly which parameters were used to grind the blade and whether the amount of material removed was too much or not enough. This data can be used to make respective corrections to the grinding parameters for subsequent grinding processes, allowing a maximum service life of the blade and saving costs. In addition, the individual wear level of each blade can be checked in the system. This permits a plannable and economical procurement of new slicer blades. Excessively long or unnecessary stock-keeping as well as downtimes of production lines due to a missing suitable blade are therefore avoided.
The user interface of the Durablade®Care system is clear, intuitive, and fits perfectly into existing digital Weber products, which are perfectly supplemented by this blade management system. Depending on their needs, customers can obtain a quick overview of data or use integrated filters to filter in detail according to time periods or performance parameters. Weber uses a data matrix code (DMC) fitted to the blades to transfer the data and clearly assign a blade, which can be easily retrofitted to all existing blades of a company.
